at the Hilton Sydney


The new Hilton Sydney Glass Brasserie 200sqm kitchen was designed to meet the needs of two executive chefs. The unique design enables both chefs to operate out of the same kitchen seamlessly. Integral to the design, the new space incorporates kitchen equipment designed by MKN, the German market leader in cooking technology.

The MKN cooking island for the Glass Brasserie Kitchen was custom-manufactured in Wolfenbüttel, Germany, and shipped to Australia prior to installation. The suite comprises 3 gas target tops, 2 lava stone grills, 6 gas burners, 2 deep fat fryers, 2 pasta cookers, 2 griddles, a pot shelf with an MKN combi oven and a MKN salamander.

The Hilton Sydney is now the 5th site in Australia enjoying the beauty of a custom-made cooking suite from MKN by Phoeniks after Moorilla Estate in Hobart, Biota Dining in Bowral,Bennelong in Sydney and soon the new Melbourne Convention Centre.

Asa’s extensive experience as a chef in the hospitality industry has provided him with a specialised mix of skills and experience to bring to his new role as NSW Business Development Manager for Phoeniks.

Asa has worked in a variety of one and three Michelin star restaurants across Europe, award winning hatted restaurants in Sydney, high-ranking positions at the Sydney Convention Centre, major hotel groups in NSW and within the aged care sector.

Asa’s vast experience gives him considerable understanding of how many different types of kitchens function and the ability to offer the right advice to make your business operate successfully.
